You can catch these unique and fresh ices and ice-pops on the highline, at special events, and of course at Chelsea Market. They have a pretty direct equation of fruit/flavorings and ice, but usually that includes combinations with strawberry basil or raspberry rose, with chunks of all the elements spilling onto your tongue as you eat them. Do not bother getting ices from any drinks or parlours in NYC, get them here.

I attended an event yesterday in which the People's Pops were serving up their icy confections. The flavor I tried was the Peach, blueberry, lavender. The pop was tasty, with real pieces of fresh fruit peeking through. The pop also wasn't too cold, but was very refreshing on a hot day. I enjoyed the pop, but found the hint of lavender distracting.
The staff was friendly and I would gladly sample more of their pops in the future.

The server was incredibly personal and answered questions in a knowledgeable manner, since it was my first time ever having one. DELICIOUS. Ingredients you can TASTE.

This is the Chelsea Market location of People’s Pops. I like it because when it is Summer you don’t have to be outdoors. This is indoors in the food court and is air conditioned. People’s Pops has a huge block of ice on display which they shave into cups just for you. It’s like a show and the syrups they use are organic and homemade. I like the plum one. They also sell fruit bars which are 100% fruit.
