Picked up an Ølandbrød. This bread is a great example of the benefits of milling grain in-house. The crust is hard and chewy without being sharp. Unlike regular whole-wheat breads, this crumb is soft without any additives due to the oils retained in the flour from the in-house milling. The wheat itself has great flavor, and the high hydration and sourdough process make for an outstanding loaf.
