I own three knives from Cut Brooklyn, a Journeyman 240, a Prospect 120 and a special Flexible Boning knife 170. I have used the first two for more than a year and the latter for 8 months. Although I have forty kitchen knives custom and semicustom in my collection my three Cut Brooklyn knives are always part of my preferred toolset. I believe they are some of the best culinary knives available anywhere. I you appreciate great workmanship and getting what you pay for then get one, or more when you can!
